Get In The Well Dressed Kitchen with Cooking Workshops by Rebecca Rosati

November 6, 2018 by Rebecca Rosati

Many times we hold ourselves back from our dreams because we are scared of failure, we talk ourselves down… we aren’t smart enough, people won’t like our work, we don’t feel ready enough. It’s been a long time coming, but the time is finally here… I am introducing my new cooking workshops. Learn how to cook healthier meals that are still delicious, along with tips on how to make cooking quicker and easier.

Cooking Workshops by Rebecca Rosati

My Self Deprecation: I am allowing my fear to deteriorate my potential! With all the social media outlets these days, it’s next to impossible not to compare yourself to others. If only I could have a diluted self-confidence to go for exactly what I want. The more I compare, the more inadequate I feel. But if they can do it, I can do it too, right!!

It’s hard to take risks in life. I used to be afraid of failure because failure is all too often portrayed as a bad thing. Therefore, taking risks wasn’t an option for me. Looking back on certain parts of my life there is no telling what I missed out on because I was too afraid to try something new or because I easily gave up when something was outside of my comfort zone.

Starting The Well Dressed Kitchen is one of the scariest things I have ever done. To put my recipes, photography, and thoughts out there for the whole world to see and criticize wasn’t an easy task for me, to say the least.

Some of the fears running through my head:

“I am not an expert, people probably already know what I have to share”

“Why would people want to learn from me?”

“Why would people trust what I have to say?”

“I look and sound stupid on camera”

Easy Egg Muffin Omelete

It was my thoughts that needed to change.

If I fail or people don’t like what I put out there… I can always get right back up and try again. It was then I started to shift my thoughts and believe that facing diversity head on was an opportunity to learn and be a better, stronger person. Once I was more aware of my own limiting beliefs, I started to move through them and focus on the positive… that people will learn from me, I will influence people to eat better, and I will help people live a healthier lifestyle… I felt more confident to step outside of my comfort zone and go for it. And now there is no more sitting back down. My fear is now my motivation.

This is the Deal:

I am not a professional chef and I don’t even claim to be a spectacular cook… in reality, I’m not.  I’m just a busy, working dog mom who loves to cook (when I have the time). Granted, I am constantly learning and getting better! While, I consider myself a decent cook, I have always been really good at throwing together simple meals that are healthy and delicious and I love sharing my tips and tricks.

I am also not trying to achieve perfection in the kitchen. If I were it would really defeat the purpose. Whether you stumbled across my blog because you are completely new in the kitchen or you want to add a few new healthy recipes to your collection of meals, my hope is you are inspired beyond my love of food and photography to discover a healthier lifestyle of your own.

So what does all of this mean and what exactly will my healthy cooking workshops offer:

  1. I will host cooking workshops led by me where I will teach a new recipe, techniques, and tricks to help you get a healthy meal on the table.
  2. Post videos and short cooking demonstrations on my Instagram @thewelldressedkitchen
  3. Use Pampered Chef products among many of my favorite products to help people learn how to use tools to get quicker meals on the table, and make cooking, overall, easier and more enjoyable.
  4. The sky is the limit – I am excited for us to learn together and continue to evolve.

From the beginning of the launch of The Well Dressed Kitchen my mission was to inspire you to make healthier decisions in the kitchen and appreciate nutritious food can be delicious. While pictures can be inspirational, I know my message will reach so many more people if you have the chance to either in person or virtually cook In The Well Dressed Kitchen.

Turkey Sausage + Egg & Veggie Casserole

November 4, 2018 by Rebecca Rosati

This Egg Casserole is the perfect make ahead breakfast. Loaded with meat, veggies, and eggs… it’s easy and delicious and also great for serving larger crowds.

Turkey Egg Breakfast Casserole

I make it on Sunday as part of my meal prep and enjoy it all week long. I prefer easy casserole recipes, simple to make, easy to clean up after, and of course, delicious. This means I can spend less time in the kitchen prepping meals for the week and more time spending time with my family and friends. This recipe is full of flavor, savory, and kind to your waistline.

Any way I can pack in spinach and veggies into my meals I am all over it and this is one of those recipes. So when you’re needing a quick breakfast loaded with greens and you’re not in the mood for a Green Smoothie, indulge in this healthy breakfast casserole without any guilt. Even consider making this crowd-pleasing dish for a brunch gathering or on Sunday morning with the family!

I am always figuring out ways to swap ingredients to make recipes healthier. I mean, it’s what I do!! In so many of my recipes I swap out red meat for ground turkey. It’s still so flavorful, full of protein and cuts out so much of the fat. The bottom layer of this casserole is sweet potatoes which adds a little sweetness. Sweet Potatoes are high in many important nutrients… essential vitamins, calcium, and iron. Eggs add even more protein, you can even use half egg whites to cut calories and unsaturated fat. I love all the layers in this dish and I hope you love it too!

Prep time:  20 mins
Cook time:  45 mins
Total time:  1 hour 5 mins

Ingredients
  • 1 lb ground turkey
  • 12 large eggs
  • 1 sweet potato, (cubed small)
  • 1 cup baby spinach
  • 1 small yellow onion, diced
  • 1 bell pepper, diced
  • ½ cup shredded cheese (I prefer parmesan)
  • 1 tablespoon olive oil
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • Salt & Pepper, to taste
  • Cooking Spray
Instructions
  1. Preheat oven to 375 degrees F. Spray a 9x9 baking dish with olive oil spray.
  2. Heat 1 tablespoon olive oil over medium heat, add diced onion and green pepper. Cook roughly 3 to 5 minutes, stirring frequently until softened. Remove onion and green pepper from skillet and set aside.
  3. Add ground turkey to same skillet and cook until no longer pink (roughly 8 minutes). Season with chili powder, garlic powder, salt and pepper. Continue to cook until meat is fully browned then add onion and pepper mixture to meat and stir to combine.
  4. While the turkey is cooking dice sweet potato into small cubes. Make sure your cubes aren't too thick or they won't be as tender. Line the bottom of greased baking dish with the diced sweet potato.
  5. In a medium-sized bowl beat eggs with whisk and season with salt and pepper.
  6. Top the sweet potato with the turkey mixture, layer with spinach, and then pour the eggs on top.
  7. Sprinkle the cheese on top.
  8. Place baking dish in oven and cook for 40 to 45 minutes or until edges of the egg begin to brown and egg in casserole is firm throughout.
  9. Allow casserole to cook for more time until egg is completely cooked through.
  10. Note: If you want to cook this casserole as part of your meal prep (or the night before serving) and freeze it for later, fully prepare the casserole and then place in freezer. To cook, let it defrost and then reheat oven at 300 degrees F and cook for roughly 20 to 25 minutes.

ARUGULA SALAD + LEMON VINAIGRETTE DRESSING

August 23, 2018 by Rebecca Rosati

Arugula Salad with a light Lemon Vinaigrette Dressing makes the perfect side for just about any dish. ARUGULA SALAD WITH A LEMON VINAIGRETTE DRESSING

Arugula and herb salad with a lemon vinaigrette dressing is the perfect pairing to just about any meal. In a large bowl, toss together the arugula, spinach, basil, or whatever fresh herbs and greens you have on hand. In a medium bowl, whisk together 1/3 cup olive oil and juice of a lemon; season with salt and pepper, to taste. Toss the dressing with the greens and top with goat cheese, feta, or shaved parmesan.

Why I LOVE This Recipe:

  1. Olive Oil Base – Healthy Fat!!! Not all fats are created equal, there are good fats and there are bad fats. Olive oil, without a question, is a GOOD FAT!! It’s high in monounsaturated fat, or the heart-healthy fat. Studies have also shown it can hep boost brain power!
  2. Keeping it Simple – There is really no need to stress because I like to keep things simple and then share with all of you. If you are intimidated by making your own Salad Dressing, this recipe is the perfect beginners recipe.
  3. Presentable For Guests – Only takes minutes to throw together and your guests will be impressed.
  4. Store in Refrigerator for up to 5 days – Homemade dressing may not last as long, but it is healthier and stays fresh for a reasonable amount of time when stored properly. Store the dressing in a glass jar, cover with a tight lid, and refrigerate your dressing. Glass jars are ideal for storing liquid items. Unlike plastic containers, they are nonporous, so they will not absorb the dressing. It’s canning season and mason jars are everywhere so go pick some up today!

LEMON VINAIGRETTE DRESSING

This salad pairs so well with My Grilled Watermelon Recipe. Serve on the side or top the watermelon with the salad mixture.
