Many times we hold ourselves back from our dreams because we are scared of failure, we talk ourselves down… we aren’t smart enough, people won’t like our work, we don’t feel ready enough. It’s been a long time coming, but the time is finally here… I am introducing my new cooking workshops. Learn how to cook healthier meals that are still delicious, along with tips on how to make cooking quicker and easier.

My Self Deprecation: I am allowing my fear to deteriorate my potential! With all the social media outlets these days, it’s next to impossible not to compare yourself to others. If only I could have a diluted self-confidence to go for exactly what I want. The more I compare, the more inadequate I feel. But if they can do it, I can do it too, right!!

It’s hard to take risks in life. I used to be afraid of failure because failure is all too often portrayed as a bad thing. Therefore, taking risks wasn’t an option for me. Looking back on certain parts of my life there is no telling what I missed out on because I was too afraid to try something new or because I easily gave up when something was outside of my comfort zone.

Starting The Well Dressed Kitchen is one of the scariest things I have ever done. To put my recipes, photography, and thoughts out there for the whole world to see and criticize wasn’t an easy task for me, to say the least.

Some of the fears running through my head:

“I am not an expert, people probably already know what I have to share”

“Why would people want to learn from me?”

“Why would people trust what I have to say?”

“I look and sound stupid on camera”

It was my thoughts that needed to change.

If I fail or people don’t like what I put out there… I can always get right back up and try again. It was then I started to shift my thoughts and believe that facing diversity head on was an opportunity to learn and be a better, stronger person. Once I was more aware of my own limiting beliefs, I started to move through them and focus on the positive… that people will learn from me, I will influence people to eat better, and I will help people live a healthier lifestyle… I felt more confident to step outside of my comfort zone and go for it. And now there is no more sitting back down. My fear is now my motivation.

This is the Deal:

I am not a professional chef and I don’t even claim to be a spectacular cook… in reality, I’m not.  I’m just a busy, working dog mom who loves to cook (when I have the time). Granted, I am constantly learning and getting better! While, I consider myself a decent cook, I have always been really good at throwing together simple meals that are healthy and delicious and I love sharing my tips and tricks.

I am also not trying to achieve perfection in the kitchen. If I were it would really defeat the purpose. Whether you stumbled across my blog because you are completely new in the kitchen or you want to add a few new healthy recipes to your collection of meals, my hope is you are inspired beyond my love of food and photography to discover a healthier lifestyle of your own.

So what does all of this mean and what exactly will my healthy cooking workshops offer:

  1. I will host cooking workshops led by me where I will teach a new recipe, techniques, and tricks to help you get a healthy meal on the table.
  2. Post videos and short cooking demonstrations on my Instagram @thewelldressedkitchen
  3. Use Pampered Chef products among many of my favorite products to help people learn how to use tools to get quicker meals on the table, and make cooking, overall, easier and more enjoyable.
  4. The sky is the limit – I am excited for us to learn together and continue to evolve.

From the beginning of the launch of The Well Dressed Kitchen my mission was to inspire you to make healthier decisions in the kitchen and appreciate nutritious food can be delicious. While pictures can be inspirational, I know my message will reach so many more people if you have the chance to either in person or virtually cook In The Well Dressed Kitchen.

Vanilla Cupcakes + Buttercream Icing

When I think of Valentine’s Day Hearts and Pink come to mind. For some people, it might be chocolate, roses, or fancy dinners and I am all about that too but I love pink and I’ll take any chance I get to decorate with pink!! I love these cupcakes because they are visually so pretty and they taste just as good! The cake for these cupcakes is vanilla with a vanilla buttercream icing.

With Valentine’s Day right around the corner, I wanted to get a post out quickly because I didn’t plan very well and here I am two days before Valentine’s Day with nothing to share. I had good intentions of sharing a Valentines Dinner and I even came up with a Salmon recipe, tested it out, got my photos and then life got busy and I never got the post out. The good news is I will be posting the recipe soon so keep checking back!

Vanilla Cupcakes

My inspiration behind this post was sharing the perfect vanilla cupcake recipe. I think it’s difficult to make the perfectly moist, yet spongy vanilla cupcake. I have messed around with a lot of different recipes and then I found this recipe by Lindsey at Life Love and Sugar and I make it all the time! It’s a quick and easy recipe and the cupcakes come out moist and delicious. This recipe uses vegetable oil rather than butter, making it similar to a boxed cake. In my opinion, the cake is more moist and lasts longer when you use oil. Click here for the recipe. I love her blog, she has really great cake recipes and her decorating is beautiful.

Vanilla Cupcakes

VANILLA BUTTERCREAM ICING

I get asked a lot what I use in my icing recipe and I am always happy to share, but this is the first time I have posted on my blog. I use a basic buttercream icing recipe. I have been using the same recipe for years and I think it’s the best consistency and tastes the best. A lot of recipes call for half butter and half shortening, but my preference for the best taste is using only butter. Also, a lot of recipes call for salted butter which pairs well with vanilla, but I always use unsalted because you never know how much salt is in the butter and too much can ruin your icing.

Icing Tips:

  1. Butter needs to be at room temperature before beating it – Make sure to beat out all lumps before adding the powdered sugar. This step is essential for a smooth icing consistency.
  2. Sift powdered sugar – Sifting removes any lumps and makes the sugar fluffier by adding air. Any fine mesh can be used for sifting, most commonly a kitchen strainer.
  3. Don’t over beat icing – Once all ingredients are combined, try not to over beat the icing as this will cause bubbles ruining the texture of the icing.
  4. Buttercream Icing is best at room temperature – It’s best to frost your cake or cupcakes when icing is at room temperature.
  5. Always make more than less – I almost always double the recipe and make enough to do the entire job because it is difficult to recreate colors.

Vanilla Buttercream Icing

This is my go-to Buttercream Icing Recipe. It tastes delicious and is the perfect consistency for piping cupcakes.
Ingredients
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 4 cups powdered sugar, sifted
  • 1½ tsp vanilla extract
  • 2-3 tbsp water or milk, more or less for desired consistency
Instructions
  1. In a stand mixer, on medium speed whip the butter until light and fluffy, making sure there are no clumps.
  2. On low speed, slowly add in powdered sugar, half a cup at a time until well combined. Add in vanilla.
  3. Add water or milk by the tablespoon until desired consistency. You should be able to hold a spoon of icing on its side without it falling off the spoon.
  4. If you want to color your icing, I recommend using Wilton Icing Color Gels. Slowly add to icing until you icing is your desired color.
  5. *Note* Double recipe if piping icing for cupcakes.

Halloween Harvest Trail Mix

Halloween Harvest Trail Mix is sweet and salty and tastes delicious! This is a festive treat that is quick and easy, no sauce or baking required. Make a big batch for a party or have fun with the kids and give away in treat bags.

Halloween Harvest Trail Mix

The only effort needed is pouring everything in a bowl and gently stirring to combine.

The Ingredients include:

Honey Nut Cheerios
Bugles
Pretzels
Peanuts
Candy Corn
Reese’s Pieces or Festive M&M’s
Chocolate Chips

You can modify any of the ingredients or even leave ingredients out. I am not a huge fan of candy corn, but no Halloween Trail Mix is complete without it.

I haven’t had Bugles in years and I wasn’t sure how they would taste in this mix, but they look like little witch hats and how appropriate for this Halloween Mix. I loved bugles as a kid and, apparently, I still do because I found myself picking them out of the batch. When I was young I would annoyingly search through the whole bag to find big enough pieces to cover my fingers tips and then walk around the house acting as if I had fake nails. If you read my post, 30 Things You Don’t Know About Me (click here) you will remember I am a huge dork and I always have been.

Halloween Treat Bags

Make Treat Bags:

I don’t have kids, but anything festive themed and I am all over it. I made these treat bags to giveaway. I found the adorable little Halloween bags and clips at Target in the dollar section… I can’t walk into Target without scoping it out and let’s be honest I always walk away with at least one or two items in my cart. Not to mention the items in this “I can’t walk into Target without looking” section are always themed and change weekly. It’s genius and I am not complaining.
