  • ½ cup cooked quinoa
  • 1 tbsp. olive oil
  • ½ small yellow onion, finely diced
  • 2 cloves garlic, minced (you can substitute jarred minced garlic)
  • 1 tsp. fresh ginger root, minced (you can substitute ginger paste)
  • 1 cup peas and carrots, from frozen bag

  1. Place quinoa and water in a medium pot. Bring to a boil then reduce heat to low and simmer, covered, for 15 minutes. Fluff with a fork and set aside.
  2. Meanwhile, heat olive oil in a large pan over medium heat. Add diced onion and sauté for 2 to 3 minutes and then add garlic and ginger. Saute for another minute or until fragrant. Add pea and carrot mixture. Sauté for 2 minutes or until vegetables are warm.
  3. Add cooked quinoa and soy sauce to veggie mix, stirring to combine.
  4. Push all ingredients to side of skillet. Lower heat and add egg and scramble. Stir all ingredients until combined and top with green onion. Toss until well combined.
